It was a real pleasure to be involved in Bord Bia’s 2022 Culinary Energies report, recently launched, working with HK&A and Bord Bia’s Strategic Insight & Planning team. This report serves to provide inspiration for the Irish food and drink industry based on energies that are shaping the global culinary world. Key themes include an unapologetic approach to cuisine, full utilisation of ingredients to protect and nurture our planet’s future, the rise of hyper-regional dishes, mindful choices made by chefs and encouraged among their guests, the importance of community, respect for tradition and innovation fuelled by technology. Leading chefs and influencers in the culinary world provide the inspiration that will shape how we source, produce, prepare and consume food and drink for years to come!
